Pear & Persimmon Salad
Inspiration:
I’m *that* person that always volunteers to bring a veggie to the holiday party, because… more veggies. I could eat this simple Pear & Persimmon salad on repeat this holiday season.
Ingredients:
serves 4-6
Salad
6-8 cups leafy greens
1 pear - thinly sliced
1 persimmon - thinly sliced
3 oz blue cheese - crumbled
1/2 cup pistachios - toasted & chopped
Dressing
1/2 shallot - minced
1 Tbsp dijon mustard (I recommend the whole grain)
2 Tbsp apple cider vinegar
2 Tbsp maple syrup (use the real deal)
1/4 C olive oil
salt, pepper, cinnamon - to taste
Instructions:
1. Add all of the salad ingredients to a large serving bowl.
2. Add all of the vinaigrette ingredients to a high-powered blender. Blend until well combined. (Pro tip - if you’re feeling lazy / short on time: combine well in a glass jar + shake vigorously 😜)
3. Drizzle the vinaigrette over the salad, toss, and then serve. Enjoy!
