Take me to the tropics! This mango-salsa is the perfect partner in crime to serve with tacos, spicy foods, grilled fish, or over your favorite taco-salad fixings.

Another reason this is a great recipe, it’s simple, easy & most importantly - it is super flexible to what you have on hand. Measurements don’t need to be exact & feel free to add a bell pepper, tomatoes, or cucumber. You could even swap out the mango for pineapple.

Ingredients:

Serves 4

2 ripe mangos (about 2 cups), diced small
½ red onion (about ½ cup), diced small
¼ cup fresh cilantro, chopped
1 jalapeño, seeded and minced
1 large lime, juiced (about ¼ cup juice)
¼ teaspoon salt

Instructions:

In a serving bowl, combine the mango, onion, cilantro and jalapeño. Add the lime juice and mix well. Season with salt and let the salsa rest for 10 minutes or longer for flavors to come together.

This mango makes a great addition to tacos, taco-salad “bowls”, pork verde, roasted salmon or any other spicy, Mexican-Inspired ingredients.

How do you cut a mango? A mango has one long, flat seed in the center of the fruit. Once you learn how to work around the seed, the rest is easy. The best way to do this is to position the mango on a cutting board so the stem so it's on top, then slice off the sides of the mango. Using a paring knife, cut a grid pattern on each mango half. Press the mango out of the skin.

This will keep in the fridge for a few days so you can serve it alongside a few different meals or with chips. Enjoy!
